This Chicken Marsala recipe comes with instructions for a thick and creamy mushroom sauce. Chicken ingredients

  • 2 boneless chicken breasts (washed and pat dried)
  • ½ cup all-purpose flour
  • 4 tablespoons cannabutter
  • 2 teaspoons cannabis-infused olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Mushroom sauce ingredients

  • 8 ounces of Cremini mushrooms
  • ¾ cup Marsala wine
  • ¾ cup heavy cream (or evaporated milk)
  • 5 garlic cloves
  • 1 ¼ cup chicken broth
  • 2 tablespoons fresh chopped parsley
  • 1 tablespoon cannabutter

Instructions

  1. Combine the garlic powder, flour, black pepper, and salt in a bowl and then dip each chicken breast in the mixture, shaking off any extra chunks of batter before placing them onto a plate and set aside for now.

  2. Next, place the saucepan on a burner and set to medium, then add 2 tablespoons of cannabutter and 1 tablespoon of cannabis-infused olive oil and allow it to heat while waiting for small bubbles to appear.

  • Fry two of the chicken breasts in the saucepan at a time, cooking them for between 3 and 4 minutes per side, or until they are golden brown.

  • Once the first two are done, wrap them in a layer of tinfoil to keep them warm while you do the same thing with the second set.

  • When this set of chicken breasts are done, wrap them with foil paper and set them aside so that you can begin to work on the Marsala mushroom sauce.

  • Add the mushrooms to the oil that is still in the saucepan, leave the burner set to medium heat, and saute the mushrooms for approximately 3 minutes or until they have browned.

  • Now, toss in the garlic and cook the ingredients together for another minute, or until it becomes fragrant.

  • Pour in the Marsala wine and the broth and give everything a good stir. By this point, it is safe to reduce the heat by approximately halfway while allowing the sauce to simmer for long enough to thicken which usually takes around 15 minutes.

  • Next up is the cream, and once you’ve given the liquid a good stir, you can return the chicken breasts to the saucepan full of mushroom sauce.

  • Cook the sauce over medium heat for between 3 to 5 minutes or until it thickens at which point it’s all cooked and ready to serve.

  • Marsala wine substitutes

    Marsala is most recommended for this recipe due to its unique range of flavors and aromas that complement chicken, but that doesn’t mean that it’s the only kind of wine that will work. So, if you’re stuck without any Marsala wine in the fridge, then have no fear, and use one of the kinds that are listed below for a similar result:

    • Dark sherry
    • Dry white wine (combined with 2-3 tsp of brandy)
    • Red Vermouth
    • Dry Madeira wine
    • Port
