What is a Greek pasta salad?

Greek pasta is jam-packed full of spring and summer favourites like tomatoes, olives, cucumbers, red onion, and sweet pepper, paired with a hearty helping of noodles, and then it’s all topped off with the most delicious addition of feta cheese. Some enjoy this dish with marinated meatballs or chicken, but this version is 100% meat-free, resulting in a light side that goes down easy, sits light, and doesn’t leave you feeling sedated.

Cannabis-infused Greek pasta salad recipe

Dressing ingredients

  • 1 garlic clove (minced)
  • ¼ cup cannabis-infused extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • ½ teaspoon oregano
  • ¼ teaspoon Dijon mustard
  • ¼ teaspoon Himalayan salt
  • Ground black pepper (to taste)

Salad ingredients

  • 1 large cucumber (sliced and quartered)
  • 1 sweet bell pepper (chopped)
  • 16 ounces short pasta noodles (cooked according to the instructions on the package)
  • 5 ounces feta cheese
  • 2 cups cherry tomatoes (halved)
  • 1/3 cup red onion (chopped)
  • 1/3 cup mint leaves
  • 1/3 cup pitted black olives

Instructions

  1. Whisk all of the dressing ingredients together until smooth in a small mixing bowl. Set it aside for now.

  2. Toss the salad ingredients onto a large serving tray and use tongs to stir them a bit before drizzling the Greek salad dressing over top of the veggies and greens.

Tips and tricks for serving and storing Greek pasta salad

This pasta salad cannot be frozen, otherwise, you’ll end up with a watery mess that barely resembles the dish it should be. However, it can be made for up to 3 days in advance of a large gathering or dinner, as long as it’s stored in an airtight container that will keep all of the freshness sealed within.
