This popular comfort food is most well known in Egypt where the vegan dish first came to be on the bustling streets of Cairo. With a harmonious blend of both fresh and dried ingredients including rice, lentils, pasta, chickpeas and spices it’s a culinary masterpiece with a bold taste, an experience that’s further enhanced by adding cannabis to the mix.

We’re so happy to introduce you to cannabis-infused Koshari, a new twist on an age-old classic dish that’s withstood the ravages of time.  Here you’ll find tips and tricks to ensure your success, as well as easy to follow instructions that will guide you through the process of making infused Koshari from start to finish.

Before we dive into the recipe, here are a few tips and tricks to ensure your cannabis-infused Koshari is as good or better than expected.

Cannabis infusion: Infuse the oil or butter for this recipe using any method you’re most comfortable with, and don’t forget to calculate the dose correctly.

Select the right cannabis strain for the job - Choose a cannabis strain with flavors that complement the aromatic spices and ingredients in this Koshari recipe. We highly recommend using strains with earthy or herbal undertones as they’ll pair nicely with the natural taste of Koshari.

Finding an appropriate dose - Start with a small amount of cannabis-infused oil or butter and then gradually increase the strength of each recipe until you find a potency best suited for your tolerance level.

A cannabis-infused koshari recipe

Cannabis-infused Koshari is a fusion of traditional Egyptian flavors with the added benefits of cannabis. This hearty dish combines rice, lentils, pasta, and chickpeas, topped with a flavorful tomato sauce, caramelized onions, and a zesty garlic vinegar dressing to create a vegan friendly cannabinoid fueled experience that’s sure to impress.

Koshari ingredients

  • 1 cup basmati rice
  • 1 cup brown lentils
  • 1 cup elbow macaroni or other small pasta
  • 1 cup cooked chickpeas
  • 3 tablespoons cannabis-infused olive oil or butter
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste

Tomato sauce ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste

Garlic vinegar dressing

  • 4 garlic cloves, minced
  • ¼ cup white vinegar
  • ¼ cup water
  • Juice of 1 lemon
  • Salt to taste

Instructions

  1. Follow the instructions on the lentils package to cook them until they’re soft and tender.

  • Drain any excess water from the lentils, then set them aside for now.

  • Cook the rice in a new pot according to the directions on the package. Once the rice is cooked, fluff it up with a fork. Now set it aside for now.

  • Cook the pasta in a clean pot following the instructions on the package for al dente noodles.

  • Drain the excess water from the pot and then set the pasta aside for now.

  • Heat the cannabis infused oil or butter over medium heat in a large skillet.

  • Once it’s hot, add the ground cumin, ground coriander, paprika, salt, pepper and stir it all together to ensure the flavors meld together. Keep the mixture cooking for one minute or until the ingredients are more fragrant.

  • It’s time to blend the lentils, pasta and chickpeas in with the combination of spices. Allow the ingredients to cook for 3-4 additional minutes, before removing the pan from the burner. Set this mixture aside for now.

  • In a separate clean saucepan get the olive oil hot by setting the burner to medium heat and waiting a minute or two.

  • Use the hot oil to caramelize the chopped onion, which will turn the edges a nice golden brown adding a boost of flavor and aroma you’re sure to love.

  • Add the minced garlic to the pan, stir and allow the mixture to cook for one minute or until it becomes more noticeably fragrant.

  • Stir the tomatoes, tomato paste, cumin, coriander, paprike, salt and pepper into the pan to make the sauce, then allow the blend of ingredients to simmer for 15-20 more minutes.

  • As the sauce simmers, it’s an excellent time to work on tossing together a garlic vinegar dressing, by combining the minced garlic white vinegar, water, lemon juice, and salt in a small bowl until the sauce is smooth and creamy.

  • Serve cannabis-infused Koshari by spooning it onto plates or bowls, then top each dish with a generous helping of tomato sauce, caramelized onions, and a light drizzle of fresh garlic vinegar dressing.

  • Garnish with additional fresh herbs if you’d like and then dig in. We hope you enjoy this cannabis-infused Koshari!

    Storage recommendations

    Store the cannabis-infused Koshari in an airtight container in the fridge. Just make sure you eat it all within 3-4 days while it’s still fresh and delicious.
