The world's best ooey gooey butter cake
If you’ve got a sweet tooth and a weak spot for ooey gooey desserts that will melt in your mouth, then you’re in the right place for inspiration! Butter cake has it all, from a hearty dose of sugars to a light, fluffy texture that feels like you’re chewing on clouds, and this sticky version of it is even better because this classic doesn’t require an additional layer of icing. Instead, it’s got a soft and gooey top layer built right in, simplifying the cake-making process.
What is ooey gooey butter cake?
Ooey gooey butter cake is just like any regular butter cake, only with a twist. Traditionally butter cakes are any cake recipes that use butter as a number one ingredient. However, this unique version of the delightful treat includes a regular butter cake bottom layer dressed with a butter flavoured cream cheese topping that is soft and super sweet.
The most amazing gooey butter cake recipe
This dessert can be served with a thin layer of icing sugar or a dollop of whipped cream for extra flair, but beware, all additional toppings will only add more sugar to what is already an incredibly sweet combination, so some will prefer the cake bare. Though technically it’s a butter cake, it’s also a bar dessert, which makes it much thicker and less flaky than a traditional, basic butter cake.
P.S. All cold ingredients must be warmed to room temperature before you get started on making this ooey gooey butter cake, so it’s best to leave them out on the counter for at least 1 hour prior.
Preparation time: 15 minutes
Cooking time: 45 minutes
Calories: 438 per slice
- 2 large eggs
- 1 box of store-bought vanilla cake mix (or the equivalent made from scratch)
- ½ cup cannabutter
- 1 teaspoon vanilla
Top layer ingredients
- 2 large eggs
- 8 ounces cream cheese
- 4 cups icing sugar
- ½ cup unsalted butter (or cannabutter for an even more potent dessert)
- 1 teaspoon vanilla
- Large mixing bowls
- Wooden spoon
- 9-inch cake pan
- Parchment paper
- Electric hand mixer
Preheat the oven to 350°F.
While you wait, combine the cake mix along with the rest of the cake layer ingredients in a large mixing bowl, crushing any lumps as you go.
Line a 9-inch cake pan with parchment paper.
Pour the bottom cake batter layer into the pan, and then tap the pan on a counter or tabletop to smooth and pack it into the dish. This will remove any air bubbles and ensure even temperature distribution.
Add the cream cheese along with the rest of the top layer ingredients to a clean mixing bowl, and then use an electric mixer to blend them together until the batter reaches a smooth and lump-free texture.
Carefully scoop the cream cheese layer into the pan, smoothing it out in the end with a few more taps on a hard surface.
Now bake the ooey gooey butter cake in the oven for anywhere from 35-45 minutes, or until the edges are brown, and the center of the dessert has set.
Retrieve the cake from the oven, and then leave it on a wire rack to cool for approximately 30 minutes before serving.
Serving and storage
Once your butter cake has baked and cooled, it’s ready to enjoy either plain or with your favourite topping choices. Of course, with such a large dessert, there are bound to be leftovers, but that’s ok, because as long as it’s stored in an airtight container and refrigerated, butter cake can stay fresh for up to 4 whole days, buying you more than enough time to consume this masterpiece in its entirety.
