Nachos are a popular choice for any event, from the big game to birthdays and anniversaries, because they’re the perfect dish for sharing and easy to make in big enough portions to feed a crowd, but if you’re looking to switch things up, then you might be inspired to upgrade to a unique version of the much loved, more traditional recipe, and that’s where nacho casserole comes in.

What to expect from nacho casserole

This beef casserole boasts layers of seasoned ground beef, tortilla chips, and corn, and it’s all tucked away neatly with a pile of cheese. Some enjoy adding extra ingredients like vegetables for a heartier dish, but the original version, which we’ll cover here, is just as amazing on its own. Beef casserole may be served plain or topped with a dollop of sour cream, ranch dressing, or barbeque sauce for a more personalized twist.

It’s the best casserole recipe to reach for when you’ve got a crowd to please and are looking for a nutritious comfort food that can be made from scratch or with help from a few canned ingredients. This cannabis-infused version will require elevated salsa or infused mayonnaise, so if you don’t already have some on hand, now is the time to check out our recipes, which should help you to get started.

Ingredients

  • 1 pound lean or medium ground beef
  • 2 cups tortilla chips
  • 2 cups Colby cheese (shredded)
  • ¾ cups miracle whip
  • ½ cups salsa (chunky preferred)
  • 10 ounces whole kernel corn (fresh, canned, or dethawed frozen)
  • 1 teaspoon chilli powder

Tools

  • 2-quart casserole dish

Instructions

  1. Preheat the oven to 350°F.

  2. Put the ground beef into a large skillet and set the burner to medium-high heat to brown the meat, which should take anywhere from 15-20 minutes. Be sure to break the chunks apart into pieces that are bite-sized or smaller.

  • Strain the grease from the beef.

  • Pour the cannabis-infused salsa, Miracle Whip, corn and chilli powder into the skillet and then give all of the ingredients a really good stir until thoroughly combined.

  • Spoon half of the beef mixture into the bottom of a 2-quart casserole dish, spreading it around to create an even layer that covers the whole thing.

  • Follow up with a generous layer of tortilla chips, and be sure to cover every inch of the filling.

  • Sprinkle half of the cheese over top of the tortilla layer.

  • Repeat steps 5 through 7.

  • Bake the casserole uncovered in the oven for 20 minutes, or until the top cheese layer is completely melted and bubbling.

  • Leave the casserole to rest for 5-10 minutes.

  • Serve these beef nachos while they’re piping hot and fresh from the oven.

    Storage tips and tricks

    Nacho casserole does contain tortilla chips which most people prefer to have a slight crunch to them, something that is lost as the dish cools and absorbs the juices. If you don’t mind a softer texture, then refrigeration is always an option, where it’ll stay fresh for a few days. Alternatively, the freezer works too, but we do highly recommend against this method of storage because it will alter the texture of the nacho casserole so much that it will hardly be recognizable once defrosted.
