Rich and decadent chocolate Coca-Cola cake

Most know the delicious, sugary sweet beverage well. It goes with just about everything from your favourite whiskey to a cheesy pizza dinner. There’s something about the way those bubbles dance across the tongue that makes it addictive and unique, and one of the most popular beverages on the market today, but few of us ever dreamed the syrupy drink we crave would be incredible when it gets turned into a cake.

What is it?

Though it would be glorious if it did, this dessert doesn’t really taste like Coca-Cola. Instead, it’s a thick, dense, decadent chocolate cake that’s perhaps slightly sweeter than your run-of-the-mill chocolate cake recipe. You’ll certainly find hints of the soda flavour in the end result, but it’s not going to be fizzy in your mouth, nor will it taste exactly like the drink you know and love, which makes it unique. Traditionally, this is a Christmas dessert, though we highly recommend baking one at any time of the year.

Coca-Cola cake recipe

Buttermilk, cola soda, cannabutter, and sour cream are the base ingredients of this cannabis-infused cake, so it isn’t quite as sweet as versions made with marshmallows, and it’s all topped off with creamy chocolate icing that’s so smooth. Coca-Cola cake might not sound like the most appetizing choice, but once you get a taste, you’ll have a hard time resisting the urge to make another right away.

Cake ingredients

  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • 1 ½ cups Coca-Cola
  • 1 cup unsalted butter
  • ¾ cup sour cream
  • ½ cup unsweetened cocoa powder
  • 2 tablespoons cornstarch
  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon table salt
  • 1 teaspoon vanilla extract

Frosting ingredients

  • 4 cups icing sugar
  • 1 ½ cups Coca-Cola
  • ½ cup cannabutter (or reduce the potency by mixing regular butter and cannabutter)
  • 3 tablespoons cocoa powder
  • ¼ teaspoon table salt

Tools

  • Non-stick spray
  • 13x9 baking dish
  • 2 Medium saucepans
  • Whisk
  • Large mixing bowl
  • Wooden spoon
  • Measuring cup

Instructions

  1. Preheat the oven to 350°F, and prepare the cake pan with a thin coating of non-stick spray.

  2. Combine the soda, cocoa powder, and butter together in a medium saucepan over medium heat. Keep stirring until the butter has melted completely.

  3. Bring the ingredients in the saucepan to a boil, then remove the pan from the heat and leave it to cool down a bit while you work with the dry ingredients.

  4. Blend the flour, cornstarch, baking powder, baking soda, salt, and sugar in a large mixing bowl.

  • Carefully add the mixture in the saucepan to the dry ingredients, stirring as you go until everything is smooth and thoroughly combined.

  • Next up, add the sour cream vanilla and eggs, and give the mixture a final, good stir to ensure there are no lumps in the cake batter.

  • Pour the batter into the prepared baking pan.

  • Bake the cake on the middle rack in the oven for 30 minutes, or until a toothpick inserted into the middle of it comes out clean.

  • Transfer the cake to a wire rack to cool, and while you wait, it’s a good time to get a head start on the icing.

  • Using a clean saucepan add the soda and allow to cook over medium heat until it reduces to between 1/3 and ½ cup. This amount needs to be precise, so it’s best to pour it into a measuring cup to be sure you’ve achieved the right amount of evaporation.

  • Once you’re sure it’s reduced enough, it’s time to toss in the butter and salt. Reduce the heat slightly and keep stirring the mixture until all of the butter has melted.

  • Remove the saucepan from the heat and stir in the cocoa powder.

  • Add the icing sugar to the chocolatey mixture and blend it in until no lumps remain.

  • Pour the warm icing directly onto the cake layer in the pan.

  • Tap the pan on a clean surface to spread out the icing.

  • Leave the Coca-Cola cake on a wire rack and allow it to cool completely before serving.

  • Storage tips and tricks

    Always store this Christmas dessert in the fridge sealed inside an airtight container, or layer of plastic wrap to seal in the freshness. In the refrigerator, the Coca-Cola cake will stay fresh for 4-5 days. Do not freeze this cake, as the high amounts of moisture will expand and destroy the dessert at sub-zero temperatures.
