This cereal cheesecake is a beautiful, colourful twist on a traditional favourite, with a nice dose of cannabis to lift the spirits. It’s sweet, crunchy, smooth, creamy, and a mouthful of flavour that is strangely addictive. Whether you need a fast solution to please guests at a party or are just on the hunt for a dessert option that looks and tastes unique, this is it.

Lucky Charms cereal cheesecake recipe

This cheesecake recipe is gently infused with only 3 tablespoons of cannabutter, so you can indulge as much as your heart desires without too much risk of going overboard. To get this desert together you’ll need a microwave and an electric mixer, but not much else!

Crust ingredients

  • 3 ½ cups Lucky Charms cereal
  • 3 cups mini marshmallows
  • 3 tablespoons cannabutter (softened)

Filling ingredients

  • 16 oz cream cheese (softened)
  • 7 oz marshmallow creme
  • 1 ½ cups Lucky Charms cereal (chopped)
  • ¼ cup icing sugar
  • 1 teaspoon vanilla extract

Tools

  • Large microwave-safe bowl
  • Spoon
  • Pie pan
  • Spatula
  • Electric mixer

Instructions

  1. In a microwave-safe bowl heat the marshmallows on high in the microwave for 3 minutes. If the marshmallows are still lumpy and not quite melted, then continue the heating process in 30-second increments until the mixture is a fluffy liquid.

  2. Stir in the cannabutter followed by 3 ½ cups of Lucky Charms cereal.

  3. Transfer the mixture to a lightly greased pie pan.

  • Use a spatula to press the mixture into the pan and then shape it by hand into a thin crust. Set this aside for now to harden while you make the filling.

  • In a separate large bowl, blend the cream cheese, icing sugar, and vanilla extract using an electric mixer until smooth.

  • Pour the filling into the cereal crust.

  • Sprinkle the chopped cereal over top of the pie in an even coating.

  • Cover the pie pan with plastic wrap and place the whole thing in the fridge to set, which should take anywhere from 1-2 hours. Alternatively, if you’re looking for a faster finish, it can be placed in the freezer for only 30 minutes.

  • Slice the pie into equal servings, and top with a dollop of cool whip for added effect.

    Storage tips and tricks

    This cheesecake is full of milk ingredients, so it must be stored in the fridge in airtight containers, where you can go back and enjoy leftover slices for up to 4 whole days. If you want to store some longer than that, then the freezer is the only good option, but beware, as it’s thick, so it will need a long time to dethaw before you can enjoy some again. For that reason, we highly recommend freezing individual slices instead of whole pies.
