Homemade zucchini and haloumi fritters

These veggie fritters are not sweet like you might expect from dessert fritters. Instead, they’re salty and savory with a hint of spice and a thick dressing sauce with a Greek yogurt base that’s simply divine.

How to make veggie fritters

Most fritters look complicated, but the truth is that you don’t need any special skills to pull off this zucchini recipe. It’s aesthetically pleasing, with a melt-in-your-mouth texture that’s addictive and a flavor that will keep you coming back for more. As long as they aren’t burnt or soggy and undercooked, they’ll be absolutely amazing, even with slight variations and measurement adjustments.

Main ingredients

  • 2 large eggs
  • 1 small radish bunch (sliced)
  • 5 large zucchinis (grated)
  • 250g haloumi (grated)
  • 200g snow peas
  • 100g smoked ham slices (cubed)
  • 2/3 cups self-rising flour
  • ½ cup fresh dill (chopped)
  • 1/3 cup all-purpose flour
  • 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon dry chili flakes

Dressing ingredients

  • ½ bunch mint
  • ½ bunch dill
  • ½ bunch parsley
  • ½ bunch tarragon
  • ½ lemon (juiced)
  • ½ cup sour cream
  • ½ cup thick Greek yogurt

Tools

  • Colander
  • Large mixing bowl
  • Tongs
  • Wooden spoon
  • Large saucepan
  • Spatula
  • Large plate
  • Paper towel
  • Food processor
  • Medium mixing bowl
  • Tablespoon

Instructions

  1. Place the colander in a large mixing bowl then add the zucchini and toss it in with 1 teaspoon of salt.

  2. Press firmly against the shredded zucchini to remove any extra liquid from the mixture, and then dump the water before adding the ingredients to the mixing bowl.

  3. Now it's time to add the cubed ham and halloumi to the mixing bowl along with both types of flour, eggs, dill and chili spice. Toss the ingredients using a wooden spoon.

  4. Pour ¾ of the oil in the saucepan and warm it up over medium heat.

  5. Scoop ¼ of the fritter dough mixture out of the bowl and then drop it into the hot grease.

  6. Use a spatula to flatten the dough, and cook it for approximately 3 minutes per side, or until the outer edges turn a light golden brown.

  7. Remove the cooked fritter from the hot oil and let it rest on a paper towel to absorb some of the excess greases.

  8. Repeat steps 4 through 7 until all of the fritters are cooked before moving onto the dressing.

  9. Add all of the dressing ingredients to a food processor and blend them together until smooth.

  10. Stir the radish and snow peas and remaining oil together in a medium mixing bowl.

Serve the radish salad alongside these delicious veggie fritters topped with dressing for the ultimate flavor-filled experience.
