What is focaccia bread?
Focaccia bread is an Italian bread that many compare to a pizza bun due to the thick texture. It’s a flatbread that’s sometimes referred to as pizza Bianca, and it can be served alone as a snack, as a side, or with a bit of dressing up, as the main dish too!
Cannabis-infused focaccia recipe
This focaccia recipe is a tad different than the traditional version because this one is coated with cheese, whereas they’re often topped more simply with herbs and spices rather than dairy or meat. Toss a handful of pepperonis to the mix for an extra twist, a dab of sauce, or any of your favorite vegetables, and you’ll have an entirely new loaf each and every time you make it.

- 2 garlic cloves
- 5 cups all-purpose flour
- 1 cup shredded cheddar cheese
- 6 tablespoons extra virgin olive oil
- 4 tablespoons cannabutter
- 5 teaspoons kosher salt
- 2 teaspoons honey
- 2 teaspoons warm water
- 2 ¼ teaspoons dry active yeast
- Large bowls
- Rubber spatula
- Plastic wrap
- 13x9 baking pan
Add the dry yeast, honey, and water to a mixing bowl, vigorously whisk the ingredients together until all of the powder has dissolved.
Wait 5 minutes or until the yeast makes the liquid foamy.
Pour the flour and kosher salt into the mix, switching to a rubber spatula so that you can scrape all the edges of the bowl as needed.
Dump 5 tablespoons of the extra virgin olive oil into a clean mixing bowl, and then transfer the dough over to it, turning the ball until it is thoroughly coated.
Plastic wrap the bowl of dough and then set it in the fridge until it has doubled in size which should take approximately 8 hours.
Grease a 13x9 baking pan with 1 tablespoon of extra virgin olive oil.
Open up the bread dough and work it for a minute or two with your hands until it’s soft and easy to shape.
Transfer the bread over to the baking pan.
Cover the pan with plastic wrap and then leave the bread to rise for at least 4 hours at room temperature or until the loaf has doubled in size once more.
Preheat the oven to 450°F and place the rack in the middle of the oven.
Sprinkle the shredded cheese over the bread dough and then pop it into the oven to bake for 20-30 minutes.
Focaccia bread is best enjoyed when it's hot and fresh right out of the oven.
