3 Simple cannabis-infused edibles recipes that are perfect for summer

Summer is upon us, and the temperatures are rising faster than many of us were expecting. The best part about this time of year is all the fresh sweet treats there are to choose from. Whether you are just learning how to make edibles or are experienced enough to have an idea of what it takes to make cannabis-infused goods, you will want to check these out. These 3 recipes are enjoyed by everyone, take mere minutes to create, and will help to keep you cool while enjoying the benefits of cannabis in the sun.

1. Cannabis infused strawberry shortcake

Makes: 6 servings

Ingredients

  • 1 six-pack of mini angel food cakes
  • 1 tablespoon of icing sugar
  • 4 grams of cannabis
  • 1 teaspoon of vanilla
  • 2 cups of whipping cream
  • 2 cups of freshly sliced strawberries

Tools

  • 1 large pot
  • 1 large bowl
  • 1 heat resistant mason jar
  • 1 strainer
  • 1 electric mixer
  • 1 thermometer
  • 6 small plates
  • cheesecloth
  • 1 cookie sheet
  • parchment paper

Instructions

  1. Place a layer of parchment paper on a cookie sheet, and preheat an oven to 240 F.
  2. Grind the cannabis and spread it in the middle of the parchment paper.
  3. Bake the buds grind for 35 minutes to decarboxylate. This process is required to achieve the euphoric results that are expected from THC edibles.
  4. Add the decarboxylated marijuana grind and the whipping cream to a mason jar.
  5. Seal the lid and set the jar into a pot that is filled approximately halfway with water.
  6. Bring the water to a rolling simmer and use the thermometer to watch for when the liquid reaches 185 F and try to maintain that temperature for three hours while the mixture infuses.
  7. After three hours, the THC will have been thoroughly extracted, and the pot can be removed from the burner.
  8. Place a layer or two of cheesecloth into a strainer and filter out the plant material as you pour the liquid into a large bowl.
  9. Use an electric mixer, or a whisk to whip the ingredients until they begin to form stable peaks.
  10. Plate the cakes on individual serving plates and top each one with strawberry and cannabis infused cool whip.
  11. Serve and or enjoy immediately.

2. THC infused watermelon popsicles

Makes: 8 servings

Ingredients

  • 2 tablespoons of tincture (or more)
  • 4 cups of crushed seedless watermelon
  • 1.5 tablespoons of lime juice

Tools

  • blender
  • popsicle molds (8)
  • freezer

Instructions

  1. Blend all the ingredients using a blender. Remember that you can always add more or less tincture to personalize and adjust the potency of each batch.
  2. Pour the combined fruit mixture into popsicle molds.
  3. Freeze the THC edibles for 12 or more hours before serving.

3. Cannabis infused dairy free chocolate milkshakes

Makes: 2 servings

Ingredients

  • 1 cup of cannamilk
  • 1 cup of coconut milk
  • 13 ounces of chocolate ice cream
  • 3 fresh bananas
  • 4 tablespoons of cocoa powder
  • ¼ teaspoon of ground cinnamon
  • 1 teaspoon of vanilla
  • ¼ teaspoon of salt
  • 6 grams of cannabis
  • 2 cups of milk alternatives (any type of dairy free milk)

Tools

  • 1 cookie sheet
  • 1 large saucepan
  • 1 whisk
  • 1 small strainer
  • 1 resealable mason jar
  • 1 blender

Instructions

  1. Preheat an oven to 245 F.
  2. Grind up your cannabis and spread the bud grind on a cookie sheet.
  3. Bake the marijuana pieces for 35 minutes to decarboxylate. This step is required to convert the THCA into THC, which produces the euphoric effects expects from THC edibles.
  4. Add two cups of dairy-free milk alternative to a saucepan along with the de-carbed bud grind.
  5. Bring the mixture to a simmer for 40 minutes, whisking the liquid frequently to prevent scalding.
  6. Strain the cannabis infused milk into a mason jar through a cheesecloth lined strainer and allow the mixture enough time to cool in the fridge.
  7. Add the rest of the ingredients to a blender for 3-5 minutes, until completely smooth in texture.
  8. Pour the freshly made cannabis infused shakes into two cups and enjoy! If you only want one, the second can be sealed and kept in the fridge for up to seven days.
