Cannabis-infused strawberry drinks and bites for a hot summer's day

One of the best things about summer is the ample variety of seasonal fruits that are plentiful and affordable. Strawberries peak in June and July, sweetened by the sun’s kiss, and it’s the perfect time to take advantage of nature's bounty. It’s also that time of year when cool treats and drinks are high on the list of must-haves, as we search for things that will help us to beat the heat.

Here you’ll find a few wonderful strawberry recipes to try, and each one offers a powerful dose of cannabinoids.

1. Strawberry water with citrus and herb

Strawberries are plentiful this time of the year and so are so many other fresh herbs, including basil which makes the perfect addition to a cool summer drink.

Preparation time: 5 minutes

Ingredients

  • 6 cups water
  • ½ lemon (sliced)
  • 1 cup strawberries (quartered)
  • 1 cup ice
  • ½ cup fresh basil
  • 5-10 drops of cannabis oil per glass

Instructions

  1. Add all of the ingredients except for the cannabis oil to a pitcher and give it a good stir.

  2. Place the pitcher in the fridge to allow the flavours to seep into the water
    for at least 1 hour.

  3. Pour the infused water into serving cups and allow each guest to choose their own strength of cannabinoids.

2. Mini strawberry shortcakes

These are the cutest strawberry cakes you’ve ever seen, and they’re so easy to make. Unfortunately, they do require a few minutes in the oven, so it might be a good idea to make them the night before you need them, to avoid sweltering temperatures in the afternoon during a heat wave.

Ingredients

  • 1 egg
  • 1 ¼ cup all-purpose flour
  • 1 cup whipped cream
  • ½ cup granulated sugar
  • 6 tablespoons cannabutter (softened)
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon almond extract
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F and combine the butter and sugar in a bowl with an electric mixer on high until it’s smooth and creamy.

  2. Add the vanilla, egg, and almond extract, then whisk until the colour is even and uniform.

  3. In another bowl, whisk together the dry ingredients.

  4. Slowly add the dry ingredients to the wet ones until all of it has been incorporated, and you’re left with a thick cookie-like dough.

  5. Roll the dough into 1-inch balls and spread them out across two baking sheets.

  6. Use your finger to create a small indent in the middle of each one.

  7. Bake the cakes in the oven for 10 minutes.

  8. Leave the baked cakes on a cooling rack until they reach room temperature, which should take around 30 minutes.

  9. Top each cake off with a nice scoop of whipped cream.

3. Strawberry Caprese bites

These delightful strawberry skewers are the most incredible snack when you’re hungry and too hot to cook. With bits of cheese and savoury drizzle, it’s an addictive feast for the senses.

  • 4 cups strawberries (destemmed)
  • 12 bite-sized mozzarella balls or cubes
  • 12 basil leaves
  • 1 tablespoon balsamic glaze

Instructions

  1. Spread the strawberries out across a serving tray.

It’s fast, easy, and oh so delicious with the sweetness of berries, creamy base of cream cheese, and the subtle addition of a salt cracker that somehow brings all of the taste and texture to a peak.
