This hearty cannabis-infused chicken spaghetti casserole is the perfect comfort food for those with little to no experience in the kitchen or time to spare. It’s rich, thick, uplifting, and the best kind of cheesy, thanks to a from-scratch pasta sauce that can be made using your favourite types of cheese. Not a fan of regular spaghetti? No problem! Because this dish is excellent with almost every type of pasta.

Ingredients

  • 1 large cooking onion (chopped)
  • 1 large garlic clove (diced)
  • 1 sweet bell pepper
  • 14 ounces canned tomatoes
  • 8 ounces spaghetti noodles (cooked according to directions on the package)
  • 2 cups shredded chicken
  • 2 cups cheddar cheese (grated)
  • 1 cup low sodium chicken broth
  • ¾ cup light cream
  • ½ cup parmesan cheese
  • ¼ cup flour
  • ¼ cup cannabutter
  • 1 teaspoon Italian seasoning
  • 1 teaspoon cooking oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.

  2. Drain the water from the spaghetti noodles after cooking them al dente. (According to the instructions on the package)

  • Heat the oil in a large skillet and sauté the onions, pepper, and garlic until it’s soft and tender.

  • Add the butter, flour, and seasonings to the mix, and cook for an additional 1-2 minutes.

  • Slowly stir in the cream and broth, frequently stirring as you go to ensure the ingredients are thoroughly blended.

  • Cook the mixture until it turns thick and bubbly.

  • Remove the skillet from the heat before adding the parmesan cheese.

  • Next up, blend in half of the grated cheddar cheese until it’s all thick, creamy, and melted.

  • Add the chicken, noodles, and tomatoes to the skillet, and blend them together with the sauce.

  • Spread the casserole mixture evenly across a deep dish baking pan.

  • Top the casserole off with the remaining grated cheddar cheese.

  • Bake the chicken casserole in the oven for 25 minutes, or until the whole thing turns a golden brown around the edges with thick bubbles on top.

    Chicken casserole like most casseroles is far better when it’s served hot and fresh, but if you can’t finish a whole batch in one sitting, or you’d like to freeze it until later, then you’ll need some heavy-duty plastic wrap. Once the dish has cooled, cover the pan, sealing all the freshness in, before placing the room temperature casserole in the fridge (3days) or freezer (12 months) for safekeeping.
