A hearty, cheesy sweet potato casserole recipe with bacon and weed

Cheesy sweet potato casserole

This sweet potato casserole is so hearty that you can eat it alone as a meal or serve it as a side that complements pretty much any kind of meat or vegetables that you can think of. Eat it plain, or top it all off with sour cream, ranch dressing, green onions, or anything else that you like on your cheesy potatoes, for a personal touch and twist every time you make them.

Ingredients

  • 3 lbs. sweet potatoes (peeled and sliced into 1-inch thick pieces)
  • 6 large egg yolks
  • 1 cup heavy cream (room temperature)
  • ¼ cup cannabutter
  • ¼ cup bacon bits
  • 8 oz cheddar marble cheese (shredded)
  • 2 oz parmesan cheese (grated)
  • 1 tablespoon salt
  • ½ teaspoon white pepper

Tools

  • Dutch oven
  • Potato masher
  • Strainer
  • Ladle
  • 9x13 baking dish
  • Silicone spatula
  • Aluminum foil

Instructions

  1. Add all the potatoes and salt to a Dutch oven and then fill the pan with water to measure approximately 1 inch above the potatoes.

  2. Bring the liquid to a boil and let the potatoes cook for approximately 15 minutes or until you can easily pierce them with a fork.

  3. Strain the water from the potatoes and then use a masher to smash all the pieces until they reach a thick texture.

  4. Next up, you’ll need to add each of the egg yolks individually, stirring the mixture well between each one followed by the cream and bacon bits.

  5. Add the cream and cannabutter to the potatoes along with all the remaining cheese and seasoning, then use the masher to combine the ingredients as thoroughly as possible. At this point, the cheese might not melt completely, but that's ok. Just ensure that you have no lumps outside of the cheese in the mixture and you’ll be good to go.

  6. Lightly grease a 9x13 baking pan then transfer the potato mixture into it using a silicone spatula to achieve a smooth top layer.

  7. Leave the casserole to cool for 1 hour before covering it with a layer of aluminum foil and storing it in the fridge until you’re ready to bake it.

  8. Preheat the oven to 350°F.

  9. Once the oven hits that ideal temperature, toss the cheesy potatoes in to bake for 45 minutes.

  10. After 45 minutes have passed, uncover the dish, and set the oven to broil to super cook the cheesy sweet potato casserole for an additional 3-4 minutes to brown the edges.
