A delightfully pink cherry cake recipe

Most cherry cake recipes only use the luxury fruit to decorate the top layer of the dessert for a fancy look, and very few incorporate the delicious juices into every single part. It’s easy to slice up a few freshly picked fruits for flair, but if you’re looking for a wonderfully pink, cherry cake that’s filled to the brim with that sweet, sweet cherry goodness, then this is it. There is so much cherry in this traditionally British desert that the whole thing adorns a gentle, aesthetically appealing shade of pink, which is glorious to look at and even better to eat!

Cherry cake recipe

This cherry cake is light, fluffy, crumbly, and sweet, which is why it’s perfect for everything from a low-key midnight snack to a dessert that will wow a crowd. Before you get to work making this fantastic pink cake, you’ll want to be sure that you have all of the necessary ingredients on hand because this batter is time-sensitive, so if you get stuck part way and have to run to the store for something, then it could significantly alter the taste and texture in a way that isn’t for the better. But once you’re ready, it’ll all come together easily as long as you keep a keen eye on the instructions.

Cake ingredients

  • 1 box plain vanilla cake mix
  • 16 maraschino cherries (chopped)
  • 3 large eggs
  • ¾ cup water
  • ½ cup oil
  • ¼ cup maraschino cherry juice (other types of cherry juice might work, but the flavor and colour won’t be so bright or noticeable)
  • ½ teaspoon vanilla extract

Icing ingredients

  • 4 oz cream cheese (softened)
  • 2 cups icing sugar
  • 1/3 cup cannabutter (softened)
  • 1 tablespoon maraschino cherry juice
  • ½ teaspoon almond extract

Tools

  • 9x13 baking dish
  • Large mixing bowl
  • Electric mixer
  • Wooden spoon
  • Small mixing bowl
  • Silicone spatula
  • Serving plate

Instructions

  1. Preheat the oven to 350°F and grease a deep baking dish with cooking spray.

  2. In a large bowl, combine all of the wet cake ingredients starting out at low speed to avoid splashing.

  • Dump the cake mix powder into the bowl and then stir it into the liquid mixture.

  • Gently stir the chopped maraschino cherries into the cake batter.

  • Pour the cherry cake batter into the prepared pan.

  • Bake the cake in the oven until a toothpick can be pierced into the middle and come out clean, which should take approximately 30 minutes.

  • Leave the cake to cool to room temperature on a baking rack.

  • Blend the cream cheese and cannabutter together until smooth.

  • Slowly add in small amounts of the icing sugar at a time until all of it has been incorporated and the icing reaches a smooth and lump-free consistency.

  • Flip the cake pan upside down over a large plate or serving tray and give it a few taps on the bottom until the whole cake pops out.

  • Use a soft-tipped silicone spatula to carefully spread the icing all over the top of the cherry cake.

  • Slice and store the pieces, or serve, and enjoy them!

    Storage/serving

    Cherry cake must cool entirely before it’s ready to be iced, and even then, you might not want to serve it to your guests until it’s had a chance to cool and harden slightly in the fridge, which should take around 30-40 minutes. Beyond that, long-term storage is doable with airtight containers because you’ll need to seal in all of that moist goodness for later. In the fridge, this pink cake should stay fresh for a few days, but in the freezer, it can keep for a month or two, with no problem.
