They’re delicious, cheesy, easy to take on the go, and much like a traditional pizza, a savoury snack that’s perfect for game day or really any time the munchies kick in. They can be customized with all of your favourite toppings, including ham, mushrooms, sweet peppers, olives, sausage, or jalapeno, but the tomato is an essential staple that carries much of the amazing flavour in this dish, so we highly recommend keeping it as a base for your creations.

Pizza cupcakes are trending thanks to an appearance on the popular show Shark Tank, and these savoury snacks were invented by Andrea and Michelle. The duo used a unique combination of sourdough and brioche to wow investors, with little pockets bursting at the seams with a thick, cheesy flavour.

How to make pizza cupcakes

When you're craving something a bit more filling, there’s nothing better than pizza, but these mini cupcakes are slightly different than the original. Here, we use real, from-scratch pizza dough that’s infused with cannabis to really get the party started, and the rest is entirely up to you. These pillowy pockets are gooey and incredibly fresh. However, they’re also quite satisfying cold, making the perfect lunch for times when you don’t have access to a microwave. They can also be reheated in just a few seconds for a fast, hot meal that’s pretty much instant.

Main ingredients

  • 1 batch of cannabis-infused pizza dough
  • 1 cup shredded cheese
  • ½ cup pizza sauce
  • ½ cup sweet cherry tomatoes

  • Roasted red pepper

  • Pepperoni slices
  • Sausage
  • Pineapple chunks
  • Ham

Tools

  • Muffin tin
  • Cooking spray
  • Small bowl

Instructions

  1. Chill the pizza dough for at least 1 hour prior to starting.

  2. Preheat the oven to 375°F.

  • Coat the muffin tin with a thin layer of cooking spray to keep the pizza cupcakes from sticking.

  • In a small bowl, combine the pizza sauce with your choice of meat toppings and half of the shredded cheese.

  • Divide the dough into 8 equal portions, then use it to make small cups by pressing it into the muffin tray in an outwards motion, taking care to cover all sides of the tin.

  • Spoon an even amount of filling into each of the cups.

  • Sprinkle a generous amount of shredded cheese on top of each one.

  • Bake the pizza cupcakes in the oven for 15-20 minutes, or until the cheese is all melted and bubbling.

  • Serve these delicious little morsels fresh and hot from the oven or leave them to cool for storage.

    Storage

    Storing pizza cupcakes is really easy because all of the sticky cheese is neatly contained. In the fridge, they’ll keep well in simple baggies or an airtight Tupperware container for up to 3 days. Alternatively, freezing them can increase their shelf life by several months, as long as you keep them in a proper freezer-safe bag or container to prevent freezer burn.

    Reheating

    Fridge: Pizza cupcakes chilled in the fridge may be reheated in the microwave for 1 minute 30 seconds on high or in the oven at 375°F for 7-10 minutes.

    Freezer: Frozen pizza cups can also be hot and ready in a jiffy. Simply microwave one on high for 2-4 minutes or in the oven on a top rack at 350°F for 10-15 minutes.
