Now that summer is here, it’s time to break out the coldest treats you can find, to beat the heat. These marijuana edibles are an excellent way to cool down, and the best part is that they provide a considerable window to experiment within. If you want an extra potent snack, then you might want to try cannabis-infused ice cream, but this infused combination is perfect for experienced and new consumers alike.

How to make marijuana ice cream bars

The weed cookie recipes that you will find below are excellent to use for the outer cookies of your ice cream bars. Once cooled, they can be layers with as much or as little of any flavor of ice cream that you like, and then wrapped in freezer-safe bags or containers and stored. These cannabis goodies will last an entire summer in the freezer, so there is no rush to polish off a batch in one or two sittings.

1. Strawberry

Strawberry cannabis infused cookies recipes are difficult to find, so of course, we had to include one in this list. Though these weed cookies are hard, they are perfect for dipping in a hot tea or coffee.

Makes: 12-24 cookies

Takes: 45 minutes

Ingredients

  • 1 ½ cups of strawberries (fresh, topped, and chopped)
  • 4 cups of all-purpose white flour
  • 1 cup of white granulated sugar
  • ½ cup of brown sugar (packed)
  • 1 cup of cannabutter
  • 2 eggs
  • ½ teaspoon of salt
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of baking powder
  • 2 tablespoons of lemon juice

Instructions

  1. Preheat an oven to 350 degrees F.
  2. Line a large cookie sheet with parchment paper.
  3. Add the strawberries, lemon juice, and 1 tablespoon of white granulated sugar to a small mixing bowl. 4. Stir them together and let them sit for ten minutes before straining out the liquid.
  4. Take a medium sized bowl, and add in the baking powder, salt, and flour, and whisk them together until thoroughly combined.
  5. In a large bowl, add the eggs, vanilla, brown sugar, white sugar, and cannabutter, and cream them together using a whisk.
  6. Slowly pour the dry ingredients into the wet ones, while mixing until the texture and color are even and clump free.
  7. Use a large spoon to gently fold the strawberries into the cookie dough.
  8. Scoop and shape 1inch balls out of the dough and place them on the parchment paper 2 inches apart.
  9. Bake the weed cookies for 15-18 minutes, or until golden.

2. Vanilla

These vanilla weed cookies are sure to impress, as their soft, chewy cake-like texture will always leave you wanting more.

  • 2 cups of cannabutter
  • 2 cups of white granulated sugar
  • 4 eggs
  • 4 teaspoons of vanilla
  • 6 cups of all-purpose white flour
  • 1 teaspoon of baking soda
    2 teaspoons of salt

Instructions

  1. Preheat an oven to 375 degrees F.
  2. Cream the cannabutter, sugar, and vanilla together in a large mixing bowl using a hand mixer or whisk.

  • 2 cups of white granulated sugar
  • 1 cup of cannabutter
  • 4 tablespoons of vegetable oil
  • 2 teaspoons of vanilla
  • 2 ⅓ cups of all-purpose white flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • ⅔ cups of chocolate chips

Instructions

  1. Preheat an oven to 350 degrees F.
  2. Add the cocoa powder, cannabutter, white sugar, egg, vanilla, and vegetable oil to a large mixing bowl, and cream them together using a whisk or electric mixer.
  3. Now add the rest of the ingredients to the bowl and stir them together until the dough reaches a consistent texture.

  • 2 teaspoons of vanilla
  • 2 cups of white chocolate chips
  • 1 ½ cups of blueberries (fresh)

Instructions

  1. Add the flour, cornstarch, baking powder, and salt to a small bowl, and mix them together.
  2. Place the butter, and sugar in a separate bowl, and cream them together using an electric mixer.
  3. Now add the vanilla and eggs before and blend the mixture again.
  4. Set the mixer to low and then slowly add the dry ingredients to the bowl as you mix them together.
  5. Add half of the white chocolate chips to the batter, and gently fold them in using a spoon.
  6. Pour the blueberries into the cookie dough and fold them into the mixture as well.
  7. Cover the cookie mixture with saran wrap and refrigerate it for 2 full hours before baking.
  8. After two hours, preheat an oven to 350 degrees F.
  9. Scoop the cookie batter onto the baking pans and top them with chocolate chips. It helps to gently press them into the dough so that they don’t fall off and burn on the pan.
  10. Bake the weed cookies in an oven for 15-18 minutes, or until golden brown.

  • ½ teaspoon of baking powder
