2 DIY Cannabis edible recipes perfect for St. Patrick's Day
Now that the day of love has gone its time to gear up for the green day, AKA St. Patrick’s Day. There have always been the traditional green beers to serve up for guests expecting a little color, now that marijuana is legal in Canada there’s also the option to have THC laced additions to the festivities. Since pot leaves are green, it is easy to make cannabis-themed decorations and edibles that will blend right in alongside more traditional four-leaf clovers. These two recipes will provide you with a basic option as well as a THC laced choice so that your guests can decide for themselves which they would rather try all while sticking with a green theme.
Emerald eggs recipe
Hard-boiled eggs are a big part of a traditional Irish feast and can be made into a THC infused version with a few minor tweaks. This recipe will require an already activated THC tincture so if you don’t have any on hand or can't get access to purchase some then check out our easy THC tincture recipe for directions.
Ingredients
- 12 eggs
- ham (8 slices)
- ½ cup of mayonnaise
- 20 drops of THC tincture (or more)
- 1 cup of watercress leaves
- 2 tablespoons of chopped scallions
- salt and pepper to taste
Tools
- 1 large pot
- 1 food processor (or mashing tool)
- 1 serving platter
- 1 knife
Instructions
- Fill one large pot with water.
- Set the burner to a medium heat and bring the water to a boil.
- Gently drop the eggs into the boiling water.
- Boil for 10 full minutes.
- Drain the hot water and run cold fresh tap water over the eggs until they are cool to the touch.
- Remove the eggs from the cold water and peel each one.
- Cut the eggs in half using a sharp knife to divide them lengthwise.
- Remove the yolks and place half of them in a food processor or a medium sized bowl.
- Add half of the caress leaves, mayonnaise, salt, pepper, and all THC tincture drops to the yolks.
- Combine the ingredients either by hand or with a food processor.
- Now do the same with the second batch of yolk that is without the THC in a separate container.
- Cut the ham slices into enough strips to make one for each egg.
- Place one strip of ham on each hollowed-out egg white.
- Drop the THC yolk mixture by the teaspoon into the center of each egg.
- Add something unique like paprika to the top of the THC infused eggs to keep them distinguishable from the rest.
- Do the same with the regular yolk mixture only do not add the additional garnishing to them, so the difference remains apparent.
- Make up a place card that clearly lists the differences between the two batches for guest to read.
- Chill until ready to serve.
Green Velvet cupcakes
A list of St. Patrick's Day recipes would not be complete without a delicious green dessert. These cupcakes will melt in your mouth and are easy to make in two separate batches so that those laced with THC are distinguishable from the rest. The most significant difference will be the infusion that is used in the icing, and the assembly at the very end. This batch will make 12 cupcakes so if you want to have more than six of each kind than you will need to double it. This recipe will require cannabutter that is prepared in advance.
Cake ingredients
- 2.5 cups of white flour
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- ½ teaspoon of salt
- 1 cup of butter or margarine (unsalted)
- 1 ¼ cups of buttermilk
- 1 tablespoon of food coloring (green)
- 2 teaspoons of vanilla extract
- 3 eggs
- 2 cups of white sugar
- cooking spray
THC icing ingredients
- 1.4 cup of white flour
- ½ cup of white milk
- ¾ cup of cannabutter
- ¾ cups of white sugar
- 2 teaspoons of vanilla extract
- 5 drops of green food coloring
Regular icing ingredients
- ¼ cup of white flour
- ½ cup of white milk
- ¾ cup of butter or margarine
- ¾ cups of white sugar
- 2 teaspoons of vanilla extract
- 5 drops of green food coloring
Tools
- 1 cupcake trap (per batch)
- cupcake liners (optional)
- 2 large mixing bowls
- 1 mixing tool
- 2 small mixing bowls

- 1 silicone spatula
- 1 spouted measuring cup

Decorations
You can decorate your green velvet cakes anyway that you like, but to keep two separate batches looking different, it’s often recommended to choose a different topping for each one. The traditional topping for these cupcakes is usually a green granulated sugar that is sprinkled over the frosting.
Instructions
- To begin, you will need to preheat an oven to 350 Fahrenheit.
- Add the flour, salt, cocoa, baking soda, and baking powder in a large mixing bowl. Set aside once the ingredients have been evenly sifted together.
- In a measuring cup add the buttermilk, vanilla, and food coloring and mix them together using a whisk or mixing tool. This dish can also be set aside for now.
- Pour the butter and white sugar in a large mixing bowl and beat the mixture together using a hand mixer or blender until it reaches a smooth consistency.
- Now add the eggs and mix again until the ingredients are combined.
- Now you can slowly add all of the ingredients to one bowl and slowly incorporate them until the mixture reaches a smooth batter texture.
- Fill the cupcake pan with the liners and spray them lightly with a cooking spray.
- Pour batter into each of the molds until each one is approximately ¾ full.
- Bake in the preheated oven for 22 minutes.
- Remove from oven and allow the cakes to cool completely before icing.
- Take one saucepan and pour in the milk and flour for both batches of icing. Turn the burners on medium while you mix the ingredients together.
- Cook the flour mixture over medium heat for five minutes until it reaches a thick consistency.
- Remove it from the heat. Cover and cool while still in the pan for 45 minutes.
- Now take out the two small mixing bowls and divide the cooled icing mix in half putting one part in each of the bowls.
- Now here is where you will have to pay attention as one batch will be laced, and the other will not.
- Add the rest of the icing ingredients into their own bowls including 3-5 drops of green food coloring and combine the mixtures one at a time by beating it by hand or with an electric stand mixer.
- Take one half of the cupcakes and the bowl of icing that's been infused with cannabutter and spread it evenly over each cupcake.
- Decorate the cupcakes in a way that makes them stand out and easily identifiable as the infused portion. This can be done by choosing a different tinge of colored sugar or by adding sprinkles of your choosing.
- Now you can prepare the second batch that’s been made using regular margarine and decorate them using a different topping.
- Place all of the cupcakes on a platter and prepare a small place card that explains how your guests can distinguish one from the other. Now you are ready to party!
